Mandarin-Beet Salad |
4 mandarin oranges, peeled and sectioned
4 cups arugula
2 cups baby lettuce
2 Tablespoons green onions, finely sliced
salt and pepper, to taste
Salad Dressing:
1/4 cup olive oil
2 Tablespoons citrus or sherry vinegar
In a large salad bowl, combine sliced beets, oranges, arugula, baby lettuce, and green onions.
Whisk the olive oil and vinegar together, in a small bowl and toss with the salad ingredients.
Toss salad well with salt and pepper,
to taste.
